前段時(shí)間在我們小區(qū)門口看見有一位大嬸在賣豆,其實(shí)豌豆和青豆我還真分不清(笨啊~~~),但是這大嬸一直說她的豆是豌豆,呵呵,好吧,就買了一些,自己回家剝出來,有人告訴我立夏要吃豌豆飯~~~~那啥,北方?jīng)]這習(xí)俗,不過還是做了一點(diǎn)糯米飯,今天把圖發(fā)上來~~~什錦豌豆糯米飯 <wbr> <wbr> <wbr>懶人粽子的最終形態(tài)

什錦豌豆飯(用懶人吃粽子的名義~~~~~)

原料:糯米、豌豆、臘腸、五花肉、粽子葉、土豆、胡蘿卜、油、鹽、生抽、糖等

做法:糯米要事先浸泡(我泡了一個(gè)白天的時(shí)間),干粽葉也用清水浸泡,并放進(jìn)鍋里煮一下

臘腸切成片、五花肉切成小丁,胡蘿卜和土豆去皮切小丁備用

鍋里放一勺油,油熱后,放五花肉進(jìn)去煸炒,煸出肥油后加入一點(diǎn)料酒

胡蘿卜、土豆下鍋翻炒,加入臘腸,加入洗好的豌豆翻炒,翻炒均勻后,加入適量鹽,一點(diǎn)糖和生抽

炒勻后加入一大碗開水,最上面鋪上泡好的糯米,蓋上鍋蓋小火燜煮一會(huì),讓水蒸氣將糯米燜熟,等到鍋里水幾乎沒有時(shí),用鏟子將糯米和菜攪拌均勻,水燒干時(shí)關(guān)火

取一籠屜,上面鋪上屜布,把事先泡好的粽葉鋪上,把鍋里的糯米飯鋪在粽葉上,各個(gè)角提起,用粽葉將糯米飯包裹,最上面壓上一個(gè)大盤子,然后入鍋蒸40分鐘以上,直到糯米軟爛即可

 

注意:干粽子葉要事先浸泡幾個(gè)小時(shí),再入熱水鍋煮一下,這樣處理的粽葉不但干凈而且柔軟

糯米一定要事先浸泡,這點(diǎn)和包粽子的原理一樣,蒸出的飯才會(huì)軟爛才會(huì)好吃

五花肉要煸出肥油后再加其他材料下鍋,這些油被后來的糯米吸收,糯米粒粒晶瑩油亮

加入糯米后先不用翻炒,就讓糯米鋪在菜表面,米并不是煮熟的,而是用蒸汽燜熟的

炒鍋里的糯米雖然已經(jīng)熟了,但是還不軟爛,口感不好,當(dāng)然想吃有嚼勁的糯米的到這步就可以了,我嘗了一勺味道不錯(cuò)什錦豌豆糯米飯 <wbr> <wbr> <wbr>懶人粽子的最終形態(tài)

 

有人問我:材料為什么非要放入鍋里炒呢?其實(shí)這步實(shí)在不能省略,原料可以更好的調(diào)味,尤其對(duì)糯米來說,用水燜熟再蒸不干硬,不處理直接入鍋蒸做出的糯米飯水分少不好吃~~~

 

讓豌豆飯有粽葉香氣的關(guān)鍵:就是要包裹粽葉下鍋蒸,就像包粽子一樣,只是包成了嫩牛五方的形狀什錦豌豆糯米飯 <wbr> <wbr> <wbr>懶人粽子的最終形態(tài)

加個(gè)盤子是為了讓粽子在里面不至于散開,當(dāng)然也可以用線捆住,我懶,我用盤子也很好,蒸熟了,就不會(huì)散開了

剛蒸好的豌豆飯是一整大塊黏在一起,攪拌散了,就可以盛在碗里吃了
